Family Tradition

The area between Landshut and Muehldorf  is old-fashioned farmland and pastures. The Huber family has a 700 year history on their premises raising cattle, later adding composting natural waste.
This generation has started an apple plant since they remembered that their great-great-grandfather had grown delicious apples and because the hills around the Winkl farm had almost no frost in late winter. The 10.000 appletrees are robust and healthy. The naturally kept soil is vitalized with micro-organisms and experts from Southern Tyrolia, Italy help to cut the branches.

How do you market the harvest of a 10ha apple plantation?
Josef Huber slowly changed  his business and invested in a very special operation to freeze-dry his harvest.
Josef Huber: "We dry our fruit without oxygen to avoid oxidation. So all vitamins and enzymes are preserved. If you add oxygen and hot air you lose the vital ingredients. Our process is very conserving. We dry 48 hours with a maximum of 37°C to avoid oxidation. The natural components of the apple are being preserved."
All of the sun that has been given to the apple during the summer months find a way into our body cells to do us well. This procedure is called  "vacuum-freeze-dry". First the core of the apple ist taken out, but instead of wasting it, it will be processed and freeze dried, because it has the most vital ingrediences.

The incomparable taste remains in the dried fruit, because the Huber family rejects the use of heat or additives. The vitamins, minerals, secondary plant material as well as the natural colors and taste are preserved.
The apple slices and the core are loosly placed on a baking tray and frozen to -20°C, then put into a vacuum tank for 48 hours.

Not only organic apples can develop their full taste in the vacuum-dry-freeze, but any fruit there is. We also process organically grown strawberries, oranges, lemon, pineapple, banana, raspberry, kiwi and especially aronia.

Josef Huber: "The aronia berry, also known as black apple berry ist to be found in any russian natural garden. It is reknown for its high concentration of antioxydants, iodine, folic acid and iron. And it has vitamins to no limits."


Organic Apple Core - The golden heart of the apple

Josef Huber:" The saying "an apple a day keeps the doctor away" also means the core. The core of the apple is the golden heart and should be eaten. I have done someting new and have vacuum-dry-frozen it, ground it to powder and filled it into jars. You can add it to natural yoghurt, muesli, curd or drinks. Several feedbacks from customers showed, that the combination of apple and aronia can reduce the symptoms of diabetes.
